Marzipan Cake

Although this cake is called Marzipan, it doesn’t have any connection with real Marzipan :)

This cake is very special because it contains lots of almonds, but you can also make it with walnuts or almonds.

Ingredients for Marzipan Cake:

Biscuit:

  • 4 eggs
  • 4 cups of sugar
  • 5 cups of flour
  • 1 cup of oil
  • 2 cups of milk
  • 2 cups of ground almonds (walnuts or hazelnuts can also be used)
  • half a bag of baking powder (9 grams, or one teaspoon)

Biscuit preparation:

Use smaller cups for the measure, as for Turkish coffee. Stir in the ingredients in the order listed and bake the bicuit at 180°C (356°F) for about 30 minutes.

Topping:

  • 12 tablespoons of sugar
  • 5 tablespoons of water
  • 200 grams of butter
  • 2 rows of big cooking chocolate (cca 100 grams)
  • 5 cups of ground almonds (walnuts or hazelnuts can also be used)

Topping preparation:

  1. Boil 12 tablespoons of sugar with 5 tablespoons of water
  2. Then add the butter and chopped chocolate
  3. When everything is melted, remove from the heat and add 5 cups of ground almonds (walnuts or hazelnuts can also be used) and stir
  4. Pour the lukewarm topping over the cold biscuit and place in the fridge to squeeze
